Cauliflower Fried Rice...


31 Jan 2017... How many of us have been able to stick to your diet resolution? I sure haven't, Lol!

But when i was good i was really good. This is one of my go-to low carb quick meals when I'm crazing rice. I will not lie to you and tell you that you won't realize that you're not eating rice, because you will, but i will tell you that is is a much healthier close alternative with approximately 250 calories per serving ONLY. That should put a smile on your face.

Here's what you'll need;

1 Head Cauliflower

1/2 Cup Sausage - Chopped (Optional)

1/2 Onion, 1/2 Green and Red Bell Pepper - Chopped

1 Spring/Green Onion - Chopped

1 Cup Mixed Vegetables

1 Cup Jumbo Shrimp

2 Teaspoons Olive Oil

1 Teaspoon Sesame Seed Oil

1 Tablespoon Chili Flakes

2 Cloves of Garlic - Crushed

1 Teaspoon Chinese 5 Spice

1/2 Teaspoon Turmeric

1 Egg

Salt and 2 Seasoning Cubes

Heat oils in pan and stir fry onions and garlic on medium heat until fragrant...

Add shrimp and cook on each side until the color begins to turn orange...

Add green/spring onions and sausage with a pinch of salt. Stir fry for a minute...

Add vegetables, bell peppers, chili pepper, seasoning cubes, turmeric and Chinese 5 spice. Turn the heat down and allow to saute for 2 - 3 minutes...

Your cauliflower can either be grated or quick chopped in a food processor. After grating, i like to transfer the cauliflower into a paper towel in batches and squeeze any excess liquid out and transfer into a bowl.

Do not use the finest blade of your grater and don't whiz it to death in the food processor either, you need it to still have texture.

Transfer cauliflower to pan..

Mix and then create a well in the middle . Break your egg into the well and scramble quickly...

Combine, taste for seasoning and serve up.
