Shepherd's Pie...


A lot of meals are made from recycled left overs and Shepherd's Pie could be one of them, at least mine was. Essentially Shepherd's Pie is a casserole of meat and veggies with a mashed potato crust. When i made my lamb chops and mash, i made a little too much mashed potatoes and they were too good to trash. Please bear in mind that this recipe could also be made from scratch. For this recipe you will need;

Mashed Potatoes

1 Onion - Chopped

1 Lb Ground Beef

Diced Carrots

Sweet Corn

Green Peas

1 Tablespoon All Purpose Flour

1 Tablespoon Garlic Powder

2 Tablespoons Olive Oil

2 Tablespoons Worcestershire Sauce

1 Tablespoon Tomato Puree

1 Teaspoon Chopped Fresh Thyme

Salt & Pepper

Pre-heat oven to 400F

Sautee chopped onions in olive oil until softened and fragrant.

Add ground meat, salt, black pepper and garlic powder. Cook for 3 minutes until well browned.

When the meat is cooked, add tomato puree, Worcestershire sauce, thyme and flour and allow to cook for an additional 8 minutes until the sauce has thickened.

If you have never cooked with Worcestershire sauce, i would recommend that you try it. It bring a bold elevated flavor to steak and any ground beef meal including Bolognese sauce.

Add corn, carrot and peas and stir properly. Taste for seasoning.

Scoop into ramekins or casserole dish...

Scoop mashed mashed potatoes over the meat and smooth over with a spatula or spoon, making sure not to break the surface so that it doesn't bubble over.

Bake for 25 minutes...

Allow to cool for 10 - 15 minutes then serve and enjoy.
