Naan Base Chicken & Mushroom Pizza...


It's difficult for me to answer the question, "what do you like to eat?", honestly, my answer is EVERYTHING. I will try everything at least once and learn to cook it as well. My Achilles Heel however is baked goods. The thought of kneading dough makes me break out in cold sweats, so i will find a cop out. My cop out here is a naan bread base.

So here goes;

1 Naan Bread

1/4 Cup Chopped Red Bell Pepper

1 Cup Mozarella Cheese

1/2 Cup Sliced Mushrooms

1 Teaspoon Dried Basil

1 Teaspoon Garlic Powder

1 Teaspoon Herbs de Provence

Chopped Grilled/Stir-Fried Chicken

1/4 Cup Marinara Sauce

1 Boiled Egg (Optional)

This was a quick-one-foot-out-of-the-door meal so i did not make my own marinara sauce so you can get that out of a jar, I'll turn a blind eye. I did prep my own chicken but you can also get pre-packed (Tyson brand) at any store.

Cut chicken breast into 1/2 inch cubes and season with salt, pepper and some chicken seasoning. Stir-fry gently for 2 minutes until brown then transfer to a paper towel to absorb all the excess oil.

Pre-heat oven to 350F.

Place naan bread onto a lightly greased of non-stick baking tray and scoop marinara sauce onto it. Evenly distribute it with a spoon then season the base with a little salt, pepper, garlic and basil. We've all had that moment when you bite into a pizza and all of the topping comes off with the cheese, this will help you not have to chow down on a tasteless topless base.

I didn't drizzle my base with olive oil because i really don't need the extra fat, but feel free to do so if you please.

Now the fun part begins. Spread half of your mozzarella cheese over the surface of your naan and in whatever (non)artistic fashion begin to add your toppings of chicken, mushrooms, peppers and even onions; whatever floats your boat really. Top with the rest of the cheese and sprinkle herbs de provence over it with a pinch of salt and some more black pepper.

Bake for 8 - 10 minutes and serve.

Its simple, its easy, it tastes great and the only major skill you need to have is knowing how to turn your oven on to the right temp.
