Pasta Carbonara is the simplest and quickest pasta dish you can cook, and it doesn't sacrifice and flavor.
To get started, you will need;
1 Tablespoon Olive Oil
1 Teaspoon Grated or Finely Chopped Garlic
1/2 Cup Chopped Parsley
Salt & Pepper
For this recipe we will be starting with the sauce because there will be no wait time to do anything else as soon as your pasta is cooked.
First of all chop up your bacon and render in a pan until crispy (without burning). Just before taking the bacon off the heat, add garlic and cook for about 30 seconds until fragrant. Do NOT allow your garlic burn, if it does, it will have a bitter taste that will taint your dish.
Break 2 eggs into a bowl big enough to contain the pasta you're about to cook, add cheese and whisk.
Add bacon and garlic to the egg mix and mix properly and set aside. Make sure your bacon has cooled all the way down before adding it so that it doesn't start to cook your eggs.
Add salt to a big pot of water and cook pasta for 8 to 10 minutes, or till al dente (cooked but still has a bit of a bite/firmness to it). Drain pasta and immediately add it to your egg mix, whisk quickly until the sauce thickens up. This step can be done in a pot, but never while on the heat. You want your eggs to thicken into a sauce and not turn into scrambled eggs, which is what the hot heat of a burner will lead to. If the pasta is too thick, add a little of the water used to cook the pasta to loosen it up.
PS. You will not be eating raw eggs, the heat from the pasta will cook the eggs.
Season the pasta with salt and pepper and add chopped garlic.
Plate up and garnish with some more cheese and bacon...
